NETTLE INFUSED APPLE CIDER VINEGAR
Spring is upon us, it is the time of new growth, the awakening of life after the long dark winter. It is a time for clearing out, making space for the new shift of energy and the welcoming of the next season of food.
The Mighty Nettle (Urtica dioica) is growing in abundance and is a powerhouse of the plant world, often referred to as a superfood due to it’s high level of protein, minerals and vitamins combined. (calcium, magnesium, iron, selenium, zinc, potassium, Vitamins A, B, C, D, E & K. Bioflavonoids, antioxidants and chlorophyll.)
Apple cider vinegar has long been known for it’s healing properties, especially as an aid for digestion. It helps to increase the release of stomach acid, thus aiding nutrient assimilation.
To infuse a vinegar with nettles, harvest just the top of the plant (wearing gloves!). Collect enough to fill a glass jar or bottle. Before filling your jar, spread the nettle tops out on some newspaper to allow any bugs and dirt to leave.
