Nettle Cider Vinegar


Spring is upon us, it is the time of new growth, the awakening of life after the long dark winter. It is a time for clearing out, making space for the new shift of energy and the welcoming of the next season of food.

The Mighty Nettle (Urtica dioica) is growing in abundance and is a powerhouse of the plant world, often referred to as a superfood due to it’s high level of protein, minerals and vitamins combined. (calcium, magnesium, iron, selenium, zinc, potassium, Vitamins A, B, C, D, E & K. Bioflavonoids, antioxidants and chlorophyll.)

Apple cider vinegar has long been known for it’s healing properties, especially as an aid for digestion. It helps to increase the release of stomach acid, thus aiding nutrient assimilation.

To infuse a vinegar with nettles, harvest just the top of the plant (wearing gloves!). Collect enough to fill a glass jar or bottle. Before filling your jar, spread the nettle tops out on some newspaper to allow any bugs and dirt to leave.

  • Fill your jar to a few inches below the brim.
  • Pour enough vinegar in to cover the nettles by at least an inch.
  • Store in a dark cupboard for 2 – 3 weeks, shaking occasionally.
  • Strain the liquid off the nettles
  • Enjoy!
  • Drizzle on salads, or drink a teaspoon in a glass of warm water before eating.
